The Gulf Oyster Project which seeks to promote safer post-harvest processed oyster products and processes, states on its website that oysters are one of the most nutritious foods with a fat content of less than 2%, a low cholesterol content of about 50 mg/100 grams and a low sodium content of between 73 and 109 mg/100 grams depending on the type of oyster. According to Kelloggs, low sodium content is considered to be anything less than 120mg per 100 grams. Oysters score impressively high on the vitamin and mineral chart and are also full of protein and glycogens yet one half pound of raw oysters only contains about 150 calories (6 medium Atlantic oysters have only 60 calories).
